Buongiorno a tutti!

Ieri avevo comperato quel bel tonnetto da un chilo e sette, proprio con l’intenzione di farlo sott’olio.

Una soddisfazione incredibile mangiare del tonno fatto da se!!!! Sembra difficile ed invece è veramente facilissimo.

Ingredienti:
Tonno freschissimo
sale marino (il 10% del peso del tonno)
acqua (1 litro ogni kg di tonno)
olio extra vergine d’oliva

alloro, bacche di ginepro

Iniziamo con il pulire molto bene il tonno, potete acquistare anche dei tranci, non per forza un tonnetto intero. La prima operazione fondamentale, è quella di eliminare tutto il sangue presente, lavando molto bene, abbondantemente sotto acqua corrente e salata. Ci vorrà più o meno un’oretta.

Tranci di tonno

Fate bollire l’acqua salata, aggiungete i tranci di tonno ed una foglia di alloro, fatelo cuocere per circa un ora e mezza a fuoco medio.

A cottura ultimata fatelo raffreddare nella sua acqua, dopodichè scolatelo e se necessario, spellatelo e spinatelo, dividendo i filetti interi. coprilo con un panno pulitissimo per più o meno 24 ore. Il giorno dopo sterilizzate dei barattoli, facendoli bollire. Una volta asciutti, inserite i filetti di tonno, pigiandolo bene, le bacche di ginepro, ed infine ricopritelo con l’olio extra vergine, Chiudete ermeticamente. Conservatelo in un luogo fresco ed asciutto
Il mio consiglio è di aprirlo non prima di 20/30 giorni.

Si conserva per 3 mesi, una volta aperto mettetelo in frigorifero e consumatelo entro una settimana.

La prossima settimana, vorrei preparare del pesce spada nello stesso modo, sono certa sarà ottimo!!!

TUNA PRESERVED IN OIL

Yesterday I bought a nice 1.7-kilo tuna fish to preserve it in oil.

It feels so great to eat your own made tuna!!!! Although it may sound difficult, it’s really quite easy to prepare.

 

Ingredients:

Very fresh tuna

seasalt (10% of the tuna’s weight)

Water (1 litre per kilo of tuna)

Extra vergin olive oil

Bay, juniper berries

First rinse the tuna well. You can either or the whole fish or steaks. The first important thing to do is to get rid of the blood by rinsing it very well under running and salty water. It will take approx 1 hour.

Bring the water to the boil, add the chunks of tuna and a bay leaf, and cook over medium heat for about 1 and half hours.

Let cool in the cooking water, then drain if needed, skin and bone it, and split the fillets. Cover with a very clean cloth for about 24 hours. The day after, immerse some jars in boiling water to scald them. Once dry, push the tuna fillets in the jar, then the juniper berries and cover with extra virgin olive oil. Seal the jars, and store them in a dry and cool place.

I advise no to open them before 20/30 days have passed.

It lasts for 3 months. Once opened store in the fridge and eat within a week.

Next week, I’m going to preserve some swordfish the same way, I am sure it will taste great!!!
